Indian Spiced Salmon

Prep:

  1. In a mixing bowl, add the yoghurt, lime juice, garlic and ginger paste, Tyga 40 (the entire sachet), Kashmiri Chilli (see ‘Control the heat’). Mix well.
  2. Place the salmon fillets into the yoghurt mix, covering the salmon completely.
  3. Add a pinch of salt and pepper.
  4. Transfer to the fridge, cover and leave to marinade for up to 30 minutes.

Cook:

  1. In a frying pan, heat 2 tbsp of oil. When the oil is hot carefully add the marinaded salmon fillets skin down. Once the skin is browned, turn the salmon over. You can keep turning the salmon every couple of minutes to make sure it is all cooked evenly. Should take 10-12 minutes to cook.
  2. Serve with Fresh Mango Salad (see below) and rice.
